Bacon Avocado Cups



I discovered these yummy little gems on Fast Paleo.

2 Avocados

4 slices of cooked bacon

1 lemon slice

3 Tbs butter

1 Tbs balsamic  vinegar

1 tsp fresh minced garlic

Cut avocados in half lengthwise and remove pits.  Rub the inside with the lemon to preserve the color.  Crumble bacon and stuff in hole where pit was.

Over low heat, melt butter, balsamic vinegar and garlic.  Stir until it starts to boil, then remove from heat and drizzle over avocado halves.
