Paleo Stuffing

I used this recipe last year and loved it so much I saved it for this year.  There are two steps because you first have to make the bread crumbs but it isn’t hard.

First you have to make the bread crumbs.  Here is the recipe-

1/2 c. almond flour

1/4 c. flaxseed meal (I make my own by grinding flax seeds in a coffee grinder but you can find it at the stores)

1 tsp. baking powder

2 pinches sea salt

2 large eggs

—In a small bowl scramble eggs with whisk.  In a separate bowl mix dry ingredients.  Add eggs to dry ingredients and mix.  Pour into greased mini-loaf pan.  Bake at 350 degrees for 22 minutes.  Remove and cool.  Slice bread in small cubes and return to oven for 15 minutes to dry and crisp.

Now for the STUFFING!!!

1 lb. ground pork sausage

4 stalks celery, chopped

1/2 onion, chopped

1/4 c. green bell pepper, chopped

1/2 med. Fuji apple, chopped

1 full recipe of the above bread cubes

2 tsp. poultry seaoning

1 tsp. sea salt

4 Tbsp. butter, melted

2 lg. eggs

1/3 c. chicken broth

1.  Brown pork sausage with celery, onion and bell pepper.

2.  In a mixing bowl, add bread cubes, sausage, apple, poultry seasoning and salt.

3.  Whisk together eggs, butter and broth then pour over stuffing and gently mix.

4.  Bake stuffing in covered casserole dish at 350 degrees for 30 minutes.  Uncover and bake for an additional 10 minutes.
